What is Yellow?

So:

RED + ORANGE + YELLOW + GREEN + CYAN + BLUE + INDIGO + ... = WHITE

If the sky is blue - why is the sun yellow?

WHITE - BLUE = RED + ORANGE + YELLOW + GREEN + CYAN + BLUE + INDIGO + ...

...which is certainly not yellow!

What's going on here?
